Eating healthy can be boring unless you realize there are such amazing and delicious combinations out there to enjoy. This is a terrific salad that works well with most proteins and is a crowd pleaser. The fact that it only takes about 5 minutes to put together doesn’t hurt. Enjoy!

Ingredients for Sweet Pepper Salad:
1 red, 1 yellow, and 1 orange sweet/bell pepper
1 Cup cherry tomatoes
½ cup goat cheese
lemon juice
olive oil
Directions:
1) gut (de-seed and de-vein) and chop the peppers into pieces about the size of a halved cherry tomato
2) quarter the cherry tomatoes
3) combine the peppers, tomatoes, and goat cheese
4) add lemon juice and olive oil to taste
5) gently mix
6) store in a sealed container (I use Pyrex) in the refrigerator until you are ready to eat
