Here is a little twist on a great cheesecake recipe. March 1st is ???? ???? National Peanut Butter Lover Day ????????- who knew? If you happen to love a gold ol’ peanut butter and jelly and have a sweet tooth but dont want to wreck your week – try this!! This is a quick and delicious solution sure to please your craving and a crowd.
Ingredients:
Crust:
4 Tbsp butter, melted
1 and 1/2 cup almond flour
1/3 cup sugar alternative
pinch of salt
1 tsp cinnamon (more if you want!)
Filling:
1 8oz bar of regular cream cheese
3 Tbsp creamy peanut butter – no sugars! ????
1 tsp vanilla
3 Tbsp heavy cream
1/4 c sugar alternative
Topping:
1 c strawberries microwaved for 2 minutes – until juicy ????
the juice of half a lemon ????
Directions:
1. Preheat oven to 350° F.
2. Melt butter and place in pie dish.
3. Add almond flour, cinnamon, 3 Tbsp sweetener, salt and mix together. Then pat “dough” evenly into pie mold.
4. Bake for 12 minutes or until lightly browned. Let cool.
5. Blend room temperature cream cheese with vanilla, sweetener, cream, and peanut butter.
6. Pour into cooled pie crust and swirl berry mixture into filling once it’s chilled.
7. Chill pie for at least an hour.
8. Slice and enjoy!
