Delicata squash, also known as peanut squash, Bohemian squash, or sweet potato squash, has a delicate rind that you can eat! No need to peel this winter squash. It ‘s easy to prepare and delicious to eat. We enjoy it roasted and only lightly seasoned.

Ingredients:

  • Delicata squash
  • 1 tablespoon olive oil
  • Salt and Pepper to taste
  • Garlic powder (optional)

Directions:

  1. Wash and pat dry squash.
  2. Cut in half and scoop out seeds.
  3. Slice.
  4. Place in a bowl and toss with the olive oil.
  5. Lay flat on a baking sheet and season.
  6. Bake at 425 for about 20minutes or until desired tenderness. (The longer they bake, the sweeter they get!)
