New Casserole Recipe: Feta, Chicken, and Orzo Oh My!
Happy November! It’s a brand new month and I have a brand new casserole recipe to share: Feta, Chicken, and Orzo Oh My!
I was telling a couple ladies about it in person the other day and they asked for the recipe. It really is easy, fast, and a crowd pleaser. This isn’t an original recipe but I have made it my own. Feel free to make it your own as well.
I have also made this without the chicken and added it in later.
This is also an easy dish to make vegetarian. Change the stock/broth and leave out the chicken.

Ingredients for Feta, Chicken, and Orzo Casserole Recipe:
1 box of Orzo pasta (I like the bigger size of of pasta)
1-2 cans of chicken stock
1 bag of spinach
1-2 boxes of baby tomatoes
1 block of feta
Italian Seasoning to taste
Salt and Pepper to taste
1-2 lbs of Cooked Shredded Chicken
Directions:
- In a large baking dish (likely 9 x 13) spray with non-stick oil lightly.
- Pour in the orzo.
- Place the block of feta in the middle.
- Add tomatoes.
- Add spinach.
- Add cooked shredded chicken .
- Add seasonings to taste.
- Pour in the broth making sure all the orzo is covered.
- Bake at 425 for 20 minutes. Give it a stir, break up the feta.
- Bake 425 for another 20 minutes or until the tomatoes start bursting.
- Enjoy!
You might notice many of my recipes say 1-2 pounds, or 1-2 cans. I do this because you might want to add in more protein than someone else or make a smaller half recipe. I tend to add more protein than an original recipe calls for.
