It’s strawberry picking season in NC currently and one of my favorite things to do with too many strawberries is to add rhubarb and make a delicious and healthy fruit compote.

Rhubarb is rich in fiber which makes it a great addition to help keep you regular and improve gut health. It’s also a great source of Vitamin K.

While I grew up eating strawberry rhubarb pies, I now enjoy this awesome tart and sweet flavor combo more regularly on yogurt, cottage cheese and even toast!

Ingredients:

  • 3 stalks of rhubarb
  • 1 cup of strawberries
  • 1 squeeze of lemon juice
  • Low cal sweetener of choice, to taste (I like this recipe very tart!)

Directions:

  1. Clean and chop rhubarb stalks. Clean and cut strawberries. Add both to a non-stick pan on medium heat.
  2. Add lemon.
  3. Add sweetener.
  4. Let simmer on low, approximately 5-10minutes or until fruit is tender. Make sure to stir occasionally.
