Roasted Delicata Squash
Delicata squash, also known as peanut squash, Bohemian squash, or sweet potato squash, has a delicate rind that you can eat! No need to peel this winter squash. It ‘s easy to prepare and delicious to eat. We enjoy it roasted and lightly seasoned.
It goes great with grilled chicken (as pictured) or even on a turkey sandwich or salad greens. Last night I have it as a side with lean ground beef. It was really delicious and satisfying!
You can enjoy it as a savory dish by adding the below seasonings or even as a sweet side by adding a little maple syrup. Either way, it is a delightful fall favorite and I hope you enjoy it too!
Ingredients:
- 1 Delicata squash
- 1 large onion
- 1 tablespoon olive oil
- Salt and Pepper to taste
- Garlic powder (optional)
- Onion powder (optional)
Directions:
- Wash and pat dry Delicata squash.
- Cut in half and scoop out seeds.
- Slice
- Slice the onion
- Place in a bowl and toss with the olive oil.
- Lay flat on a baking sheet and season.
- Bake at 425 for about 20minutes or until desired tenderness. (The longer they bake, the sweeter they get!)
Recipe Upgrade:
- Add a sliced onion and sliced apples to your baking sheet with the squash.
- Follow the directions as listed above.
