Green and Lean Breakfast Muffins

Need a delicious and nutritious breakfast on the go? You got it! These delicious breakfast muffins are an easy morning meal. Full of veggies and protein they will keep you easily satisfied until lunch.  Enjoy 2-3 per meal. 

Ingredients:

  • 1 tbsp, Butter – Salted
  • 1 cup chopped, Broccoli, raw
  • 4 oz, Ham – turkey, bacon – Your choice!
  • 6 large, Egg
  • 0.50 teaspoon, Salt
  • 0.50 tsp(s), Spices, onion powder
  • 4 tbsp, Coconut Flour
  • 4 oz, Cheese, cheddar
  • 5 oz, Sauteed Onions

Directions: 

  1. Sauté the onions until soft and then add in broccoli and cook until tender. Let cool. 
  1. Beat eggs, salt, garlic powder, and butter together. 
  1. Add coconut flour and mix until smooth. 
  1. Fold in cheese, protein, broccoli and onions. 
  1. Bake at 400 for about15 minutes.   This makes about 12 muffins.
