Chicken salad is a Southern staple. Try this recipe for a simple twist on a classic favorite.  Did you know chicken salad recipes can be found in early 19th century Southern cookbooks, including Sarah Rutledge’s “The Carolina Housewife?! Enjoy!

Ingredients:

  • 2 cups chicken, cooked and shredded
  • 1 avocado
  • 2 tbsp mayo or Greek yogurt
  • 1-2 green onions, sliced
  • fresh cilantro to taste
  • lime juice to taste
  • salt/pepper to taste

Directions:

Mix all ingredients in a large bowl. Cover and refrigerate for 20-30 minutes to allow flavors to blend together.
